Are you talking about the Starbucks worker or airline pilots and (more importantly) flight attendants? I don't know how the pay scale compares for a regional airline's flight attendant versus a Starbucks "barrista," but I'm thinking the FA has to be up at 3 am to deal with a bunch of cranky passengers and (s)he are trapped in a metal tube with them. Seems by your logic there should be a tip jar at the front galley.
I don't think a gun is being held to the F/A'a or *bucks head. They both have the option of quitting.

Getting back to the poster's point, I just don't really see why a tip jar is anything to write home about. No one is going to think any less of you if you don't tip, and if you do, that extra hundred dollars at the end of the month is a nice little bonus to someone who might be struggling to make rent or just wants to have a fun night out with their friends.

A mechanic once told me if you could see the inside of a potable water tank, you'd never drink airplane coffee again.
Maybe not on a brand new plane, but a 757 built in 1985...God only knows if it's ever been replaced. I visualized a metal walled tank with long strands of vegetation swaying in the water like a video of an underwater camera shot of seaweed in the ocean.

As far as buying someone's coffee or drinks or dinner, it is my gift, not my obligation.
As far as tipping, filling a cup and/or ringing up my purchase does not rise to that level and I find the expectation it does to be arrogant and self aggrandizing.
As far as shaming me into tipping someone undeserving of a tip based upon their need, who the hell are you to decide for me who most needs my money?
