My girlfriend lives with me so I'll be fine to ZED with her on most American carriers as a domestic partner, correct? Mainly Delta I'm concerned about

By “guest riders” they probably mean “travel companion”.... For the guy asking about DL yes for quite a few airlines, but unfortunately not with DL. For a “domestic partner” if they are qualified then yes Zed Mediums with DL.

Delta will upgrade you to first/business at the gate as a jumpseater both domestic and international.

If your girlfriend is your travel companion, No. But there are many other carriers that she can.
