I travel literally every month abroad. Be very careful non-revving to Europe in the summer. You may have no issues going there but it may be very difficult coming back with your wife. You may be stuck there several days. Otherwise, I would go with Lufthansa out of Chicago to Frankfurt and connect there.

Take any flight that seems doable in/out of mainland. Wherever you end up you can RyanAir, Wizzjet, etc around the continent.

For the past 7 years Lufthansa was the best for me as well.

Your initial assumption is correct. 'Quite' being an understated agreement with what you said.
