Well, just make sure every one of your students are your uncle...then you're fine.

As I recall (I'm reaching back a number of years here), it was from an article by the guy who writes the aviation law column in AOPA Pilot. A quick call to AOPA should chase down the specific reference.
In the BFR example you gave, you left your signature in your uncle's logbook (had to sign off the BFR). He got something of value from you and the presumption would be that you received something of value in return. Even if the only compensation was the time in your logbook, it still counts as such. That was the standing precedent as of about five years ago and I haven't heard/read anything since about it being superceded by another legal opinion.

Hey folks, let's focus here! This thread was about earning money to supplement regional pay. Unless I'm missing the "big picture", if you were CFI'ing on the side wouldn't the point be to actually MAKE money on the side?
I believe the FAA's view of counting flight time as compensation was when it was used towards meeting the requirements for a certificate or rating.

Here's what you do. Buy a desktop flight simulator or PCATD and set up an IFR training program. You charge an extra, extra, high price for sim instruction (doesn't count as commercial flying) and provide yourself as a safety pilot (and don't log it) for free to the student.
You guys are making too big a thing out of this. Don't ask, don't tell...it's worked for years...
