Just interviewed last week.

Don't staple or paper clip anything. I had official Air Force records (FEF, Green Flight Record Folder) that were obviously in their respective folders. My paper Jeppesen logbook from my PPL days was obviously bound too. I printed my electronic logbook and it was spiral bound.

My OPRs were loose. All the other documents were loose. The two folder idea for set 1 and set 2 is a great idea. You definitely want to be able to just pull out what they ask for and set it in the pile where it belongs.

Don't forget to bring your psychologist authorization signed as well.

Follow the instructions exactly. Logbooks can be spiral-bound if printed from digital records. I included a contents page listing total hours etc. and where to find all checkrides (dates and page #). This isn’t required, but was suggested by someone else who’d just been hired. Not sure if it made a difference as not one question relating to my logbook was asked - they simply handed it back to me at the end of the interview. And I got hired!

Theres no nice way to say this. A fair sized part of the application process ("the test") is being self motivated, following directions and interpreting them correctly. You should probably do your research.
