The land of make believe is for kids. When my son was around 5-6 he used to walk around with his fist clenched and claimed he was holding his pet dolphin. He’d spend his entire day clenching his fist insisting there was a dolphin in there. We humored him and he grew out of it.
Im not into humoring adults who live in the land of make believe. Just because someone adamantly believes something is true and throws a tantrum doesn’t make it so. The ridiculousness will never end and will only get worse by the constant humoring.
Kudos to the agent for not getting sucked in.

If you were to try saying this to a fellow delta pilot, employee, or passenger I trust you understand it would not go over well.
What about "I'm sorry ma'am. I meant no offense" would be getting sucked in? Why would that not be an appropriate response?
What is it about asking to be addressed by the proper gender is ridiculous humoring?

Intentionally calling someone by the wrong name or pronoun (including their rank or salutation) even if you've been corrected is the problem. It's disrespectful. Just like you'd probably be upset if you were having a disagreement with someone and they kept calling you ma'am or Miss AMC, you'd have every right to be upset.

Imagine if your flying with a new FO who keeps addressing you as SIR constantly. You ask that they stop calling you Sir, and just call you by your first name. The why doesn't matter here, the polite thing for them to do would be to call you Jim/Steve/Bob or whatever.
