Actually, it started in Naval Aviation when the long range seaplanes had multiple crews aboard. The "bridge" (flight deck) watches were relieved exactly the same way they were relieved aboard ships.

Pan Am just adopted procedures originated by the NC flight across the Atlantic in 1919, the NC-4 the only aircraft to make it all the way.
