It’s starting to change. For the most part your correct but I don’t want to deal with the issue when I am in a hurry. Keep in mind if the agent refuses you with 3 bags they are following policy.

If you want 3, take 3, just make sure you’re getting the most use out of them. I’m on trip 2 of IOE, with 3 bags. My cooler had a pass through handle so it sits on top of my luggage works stealth, and my flight bag / headset case go on the J hook. I’m in a CRJ, but everything fits. It’s worth the extra bit of hassle for me to have known, healthy food options (and cost savings).
Sometimes I think we as pilots get so caught up with what our peers might think...do you boo boo.

You guys that have been in the industry for a while I could use some advise and some Do's and Don'ts.
I have my first IOE trip next week and I'm unsure of how many bags to take. I will be commuting.
Currently I have a Roller Bag, Cooler, and flight bag. Should I try to consolidate my flight bag contents into the cooler so that I only have to carry two bags, or is it not a hassle to carry three bags?
Any advise is welcomed

2 bags. I skip the cooler nonsense.
It’s possible to stay perfectly healthy by bringing some small nonperishable snacks, eating out once per day (usually at the overnight), and using the hotel gym daily.

Depends on your airline. Half of our overnights by the time you get to the hotel your options are a speedway hotdog or begging the shuttle driver to take you through a drive thru.
