For IAH, I would definitely shoot for the Airbus. The Guppy fleet in IAH currently has over 600 F/O's and prob only needs a little over half of that once they balance all the flying with the other domiciles.
Right now IAH has about 27 % of the domestic HUB 737 departures, but has 47% of the Domestic Hub 737 F/Os. While that is a very back of the napkin way to estimate pilot need, the difference is large enough to say that the IAH 737 Domicile is going to be shrinking through attrition for some time to come.
On the flip side the IAH HUB has 15% of the A320 departures, but only 4% of the A320 F/Os, so that will be a growing domicile.
