You mean preemptively pick up trips while in a reserve duty block, so you don't have to rot in a crash pad or because you hate your wife? Yes, you can do that, but only company OT that was going to a reserve anyway.
Do you mean pick up on days off and credit over reserve guarantee? Yes you can do that too, although it can be shut down certain due to contractual triggers. I'll let others address the availability of OT at the moment, although normally in general there should be OT since the company likes to run lean on pilots (last couple years have been strange due to boeing issues mainly).

I was referring to picking up flying over my reserve days to have more of a known fate rather than sitting in a crashpad. Is there truth to picking up +/- 1 day of your bucket? Or is that folklore? How many reserve days a month do people get awarded on average?

You owe the company 18 days of reserve every month. Sometimes you get 12 days off others you get 13.

Yes. +/- 1 one day, I've done it. When there were enough trips that I was obviously going to get one, I'd always chose my fate if there was one available that qualified.

It's truth. I'm on a 3 day right now that I grabbed at 7am the day prior to my 4 day block starting. It makes me difficult for scheduling to use on my last day of long call.
