I am at 1100 hours and am about to leave my job because of the company's mandate. How challenging do you all think it will be finding my next job (probably a 135 FO or VFR 135, considering I'm not yet at 1200) if I remain stubborn about the shot?

Lot of operators are hurting for pilots as the hiring ramp starts again at the majors (comes from just looking at the openings on the orange site).
I'd look at location first, then company. That's your best bet of avoiding the jab.
