I'm in a non 320 base but I got to fly with a lot of pilots from other bases thanks to the split rotations that they did this past summer. For others that ARE in my base, 320 has come up because there is talk of a 320 base opening and there definitely were actually a lot more than I expected that at least say right now they would not bid to it because of the pay. By more than expected, I only recall a single captain saying he would bid to the 320 if we got a base. Granted my category is quite small so the sample size isn't very big, but I was still expecting more than that.
It’s also sounds like you’ve got a little bit of expectation bias going on too. You seem to assume that a lot of 737 pilots might bid the 320, because of the roomier cockpit, and possibly because of the rumored Hawaii flying. I wouldn’t want to endure a month on VA Ave to switch from the 737 to the 320, and take a pay cut. But again, that’s just me.
I heard a rumor that one of the most senior 7ER Captains in LAX bid the 320 when it opened, thinking that the Hawaii flying was right around the corner. He was one of the first to convert, and found himself flying red-eyes to MEX, right out of the box, and is none too happy. It may be made up, but it made me laugh in sympathy.

I am on the 320, and I like the airplane, and I like the trips for the most part. In MSP, starting a 4 or 5 day trip with a LAS or PHX turn can start moving the fatigue-o-meter needle early in the trip, but aside from that, the trips are decent. Having said that, if I was on the 737, I wouldn’t even consider going to a full school, just to have a more (much more) comfortable cockpit. Even if the pay was the same, or a little more. But that’s just me. I used to enjoy learning a new airplane. Now, not so much.

The Hawaii flying topic does actually come up. Some of these pilots have no desire to do long haul international so they don't really want to fly the ER or 330. As I said, a number have said that the straw that breaks the camel's back as far as their potential decision is the pay cut. I'm only relaying what I am hearing from other pilots.

319/320 should pay the same as the 737-700/800. Change my mind.

I'll give you that. But I will bet there is little to no impetus to give a disproportionate raise to that category due to our pay methodology.... you know... to 'make it right'.
