If anybody has found a better system for hotel stays, I'm all ears.. but I think that's currently the best option.

I've never used (or know what) a Z31 is. I usually just book through the app. The rates are usually as good or better than anything else you're going to find online and often there are special deals. For example, I just booked a Bonvoy property in downtown Atlanta for a family function and for a few bucks more it included tickets to the Georgia Aquarium.

I think most people will agree that Hyatt has the most valuable ecosystem for point-earning and redemptions. It's not uncommon to find a Hyatt redemption for 2.0˘ per point, even at the cheaper properties, while Bonvoy might average 0.8˘ per point. Interestingly, the best general way to earn Hyatt points imo is actually with a Chase Sapphire, which has solid earn rates on travel and dining and allows you to transfer those points to your World of Hyatt account.

Hyatt does have the most valuable points

Terrible idea. Those types of cards typically have a $5-6 activation fee per card. You’re better off buying gift cards for stores/businesses that you use. Grocery stores, box stores, home improvement stores, etc.

Or as you say, buy gift cards from a vendor that you already use (WalMart, Target, Amazon, etc).
