Junpseating in jeans during probation or any other time is fine. Just don't try to do it offline and you will be ok. This is SWA, and it is just part of the culture. Jeans, as long as they aren't ripped, and a polo shirt with non-sneakers is just fine for any SWA company jumpseater.
Note - Not the case for offline riding on SWA, has to be business casual for you guys, although I doubt many captains will enforce that.
I don't think the Doubletree has the happy hour with free brew like the Wyndham did. Still has good prices and a hefty discount on food and refreshments, but they are taking themselves pretty seriously since they changed brands. The crew rate for rooms there is $140 now. It used to be $90. Have to pay for all those cookies somehow I suppose.
My keys for success there were:
Don't study very much until the very end
Stay in the bar until it closes every night. The bar staff there are awesome and if you take care of them they will take care of you.
Bring a car so that you aren't trapped there.
The training is very gentlemanly. Take it seriously, but it is very low threat.

For Doubletree folks.
If you are using DFW to commute (on AA) take the orange line train from DFW terminal A to Burbank Station and the Doubletree van will pick you up there. $2.50
For food there is a Quik Trip next door with very basic groceries. A Kroger is about a mile away, Uber and Zipcar work great.
There is a Fuzzys tacos within walking distance (along with a Potbellys and a Starbucks). Fuzzys gives a SW discount. The Frontiers of Flight museum (also walking distance) is free for employees if you're not sick of airplanes and need to kill time.
