Or would you have to wait the 2 years to bid out of the 320 to the 75/76? Is there also a lock from going 320 to 737? Thanks!
You can always bid up (i.e. from NB FO to WB FO to NB CA). The seat lock would prevent you from moving laterally or down the ladder, including a 320 to 737 move (unless you bid CA).

Also, just so you're aware, WB FO (and everything else) has gone much more senior lately, so this probably won't really be a concern or limiting factor for you, at least for a while.

To answer the other part of your question, the 756 is not a WB category. Although the 764 does get WB pay when you fly it. It’s an intermediate category here, so you could bid NBFO-756FO-WBFO-NBCA without seat locks.

Seat lock applies to lower or equal pay. You can always bid any seat with higher pay

There is an equipment lock as well if you lateral. 3 years in base or 2 years out of base. If for some reason you went 737 FO to a320 fo, 3 years only thing you could do would be upgrade on the bus.

Pretty senior but that's kind of irrelevant.

Vacancies come in two flavors
1) company posts 10/20/100 positions on the 756
2) company posts positions on other fleets and 1/2/3 756 pilots happen to bid out

Situation 1 goes junior, sometimes very junior
Situation 2 goes senior, sometime very senior. 1 open 756 slot and a guy who has been here 22 years happens to want it.

Situation 2 has been the norm recently. You're not gonna have to wait 22 years, but it's hard to say how soon the company will post significant 756FO vacancies. Could be a few years.
