Just for some perspective, I flew with a reserve CA here at PSA some months back who came back to the states from EK. He also used to work at JetBlue before EK. And that guy couldn't get a call from a legacy right away. He is still trying to get on somewhere as far as I know. So it isn't as easy as you may think. If you really want to come back to the states, I would apply everywhere you can, and see what comes your way.
Chrisreedrules' advice, get a job ANYWHERE in the US, is the most sound advice offered in this thread. I'll add that the OP should look for a job where he's going to land the aircraft at least once a day, not Omni or Atlas. After a short stint at a regional or LCC, the majors will move your resume up close to the top of the stack. But coming from EK directly to UA/AA/DAL is a dicey longshot.

Honestly, ask yourself - do you just want back in the U.S.A., or will you come back only for a legacy job. If it's the first case, then you might consider applying to the second tier of carriers like Spirit, Frontier, Allegiant. Reason being once you're in the States it'll be 10x easier to do the networking, the job fairs, the volunteer gigs, that are now essential to getting an interview slot.

After 10+ years at EK, considering going back home. Which of the three DAL/UAL/AAL would you recommend and why?
-How many years to upgrade?

Looking for quality of life first, pay second. Also enjoy international flying, and would want to get back to that soon.

Out of the 350 or so pilots at EK from the United States
80 percent are RJ drivers

5 United pilots only went to EK.. as I was told by the furlough coordinator
Can you tell us how many from Airways went?

Most Americans that went to Emirates were in two large phases, one was the post 9/11 phase when they were being furloughed here, losing pensions, and EK was offering a DEC widebody position. It was as close to current buying power as they could get. You want to blame someone, go blame the seniority system and the complete lack of portability it offers once a carrier goes poof or you get furloughed. The second phase of pilots was the 2008-2011 phase when Age 65 passed and the economy tanked into the great recession. Again, no legacy was hiring and some were even furloughing. Most of these guys that went were RJ guys, and guess what? Those were (and still are) union jobs flying Delta, United, and American painted jets at less than half the going wage at the legacies.
The sheer hypocrisy of it all is quite rich.
