What is EAS looking for in a applicant? Is it just strictly flight history or are there other things they are looking for? For example, a well rounded applicant might volunteer as a youth baseball coach or something.

I'm sure someone will correct me if I'm wrong, but flight history will get you moving towards the interview. Once in the interview, volunteer history as stated above would be a great thing to mention to the interview team and would play favorably to your advantage. Being a great person both in and out of the cockpit is part of the EAS culture!
