It's done by the traditional way of bidding off of a bid packet or monthly schedules. You bid in preferential order and what your seniority holds you get awarded it. It includes everything from hard lines to composite/relief lines to reserve/airport standby lines. The hard lines include schedules that you would fly if awarded however if you don't like the flying but like the days off included in that line, you can trip trade multiple ways. Composite schedules which is a hybrid of a hard line and reserve is completely blank on the bid packet. Why? Scheduling builds you a schedule afterwards when all the trip trades are completed. Then reserve is, well, reserve.

Eating healthy is difficult, I was able to find one excellent place in terminal B at DFW that is very good with healthy foods. If I'm starting out a 5 day reserve week then I'll cook food a couple nights before then freeze it and pack it in my lunch box, with a Tupperware to heat it up at the hotel. Most hotels have a fridge and a microwave in the room. It's tough to eat healthy but if you put in the effort you can do it. I've been lazy to do all this lately though.
