I think they would care less than they would otherwise... when I was hired I didn't have any 121 time, though I had two jet type ratings and about 150 hours total in jets. I've had two busts (private and initial CFI because I wanted to save money and did it with the FAA instead of a DPE - long story). That seemed to be the magic number - no more than two total busts.
If I had to guess, this could have come from accidents like the one in Buffalo where the captain had a history of failed checkrides, or it could simply be that they have been tracking the overall performance of people long enough that they think anything more than two is a red flag.
That being said, if you are a successful 121 pilot elsewhere, and want to move to XJT, I certainly wouldn't let more than two busts discourage me from applying, especially if your training record at your current company was flawless.
