Advancements in avionics have come a long way in just a decade. In addition passengers are willing to let the TSA fondle their junk for a $69 dollar flight to Las Vegas with a crew of high school looking pilots up front. Offer them a $65 dollar flight and only one pilot and I think they will do it.
Never say never. There is a pilot shortage on after all. What else is a poor airline to do?

The day will come when single pilot operations will be a reality. It will take time but it will happen. The way we view technology now will be different than 10-20-30 years from now. We have cars that can park themselves and provide spacing on the freeway just by programming the buffer you like. As people become more reliant on technology they fear it less.
I'm sure if you asked a pilot from the 70's era if he thought the AF would be flying pilot-less strike aircraft and hitting targets with precision they probably would've laughed their asses off at you... but look where we are now.

Back in the day....(70's & 80's), the the crew was made up of that gray haired Captain, the married middle aged FO, and the single, sports car driving, woman smasher, party party party 20 something year old FE. Aaaaaaah! the good ole days.

'Tis true that airlines hired off the street and trained them to fly in the mid-60s, not many and nearly all didn't make it. The requirement was to get the PPL on your own and they supplied the rest. Airlines used to advertise in FLYING magazine, too. I flew a guy who was hired with a 100 hours in a Luscombe--terrible, he was. Another friend applied at UAL and was hired on a bet.
