MSP & ORD are the most junior domiciles, but I've seen some west coast bases awarded within a few months of hire.

as mentioned before, ORD and MSP, but I also know some guys to get COS and DEN straight out of training. IAH, SEA, and SFO a few months afterwards as well (also depends if you go CRJ or E175)

?? If I pick up open time on my day off (even if im a reserve, line holder etc ) is that essentially bonus pay on top of the 75 hours or does it get included back into the 75 hrs of reserve or line time..

does that make sense?

for instance i will have only flown say 40 hrs on reserve but im guaranteed 75 hours of pay so is open time additional on top of that 75

It will be on top of your pay. For example on an off day you pick up a 6 hr local. Your pay that month will be 81 hrs. (If you don't break guarantee of course)

so if i actually fly 45 hrs on reserve in a month I get paid for 75 and anything in open time that I pick up is on top of the 75.

Yep, but flying you pick up on your own doesn't go towards breaking guarantee.
