I have no idea what this means.
For me, it's a work-life balance. About two years ago, I hit the "I've only got a few more years left on this Earth" point, and that affects how and what I bid.

Does the vacancy bidding screen relative seniority become more accurate with every snapshot? Should it match up with the category summary by the last snap?

Nothing is absolute, but for the most part, I've found that reserve has been in my control for my entire career path. Others... maybe not. With the exception of being a new hire, it has been within my control as well. I chose to stay a very senior 737 fo rather than upgrade to reserve ca. Later when things contracted, I bid 737 fo again to avoid dealing with reserve in a higher paying seat. For those who chase a seat or don’t down bid, reserve is a choice. For those near the bottom, it is given to them when those junior to them are going out on furlough.

There will be a few that change their mind last minute, but for the most part, the last snapshot has been fairly close to the award from what I’ve noticed.

United went 18 months without hiring anyone and is now hiring 200/month. The link between years on property and relative seniority is not at all linear.

”oh, a pilot held X after 3 years” is only relevant if you were hired 3 years ago

Yes, but you said you could see DOH. Where can you see that?
