I just checked and the 757s are running the thinner routes out to hawai'i right now from LA and Seattle. Why is that? Is it because the 757 holds more people, makes better profit, or has better performance than the 321neos? I rode on an 321neo last winter out to Kauai.

sometimes the NEOs have to make fuel stops with winter winds. Not common, but the 757s can fill up and go without any stops for the most part. Routes are switching back to the NEOs in March.

Full disclosure, I've never flown either the 757 or the NEO, but why would the NEO be incapable of making the westbound trip to LIH from LAX? It seems well within the aircraft's range. In fact, per Boeing and Airbus website data, the NEO has almost the exact same range as the 757 (almost 1000nm longer than both the 737-800 and 900ER which I believe do those flights for WN and UA if I'm not mistaken). Is it climb performance, or some other limiting factor? Seems the NEO should be able to get it done without any problems.

Bonus would be using them on longer stuff elsewhere depending on the season. Use them for West coast to Hawaii November to April, then eastern US to Europe in the rest of the year. Yes before someone jumps down my throat on widebodies for TATL, Cargo, etc I get it. Just thinking about getting maximum use out of an asset like that. Easy enough to send them on MSP/DTW/JFK-KEF for the summer seasonal stuff. Gets network some various gauge to work with, and we know they like that. Prob could work on stuff like BOS-EDI/LIS where there's less likely to be cargo, and we can send that stuff on the heavies to JFK just down the road.
