Can a regular pilot deviate on the front end of a rotation and book positive space on a connection carrier?

Yes. But you’re supposed to use the form on icrew and not the company business form you would use to commute.

Has any done AMS lately? Can you leave the hotel? Are restaurants open if able to leave hotel?

You can leave the hotel, restaurants are primarily takeout only. Lots of people walking around AMS; 50% of locals aren’t wearing the mask outside. Both close grocery stores open.
